I haven’t read your substack before and I was not expecting a gluten free pancake! I’m about two months in on a GF diet (for an autoimmune condition that needed a course change) and not feeling very happy about it. I can’t wait to try this!

I love almond flour and buckwheat etc for all their flavor, and the benefit of tenderness you get without gluten. It must be tough to skip bread and pizza etc but hopefully you can find a few recipe here that won’t make you miss it.

Would buckwheat flour work well as a substitute for almond flour? Or even oat flour?

I haven’t tried oat, but use buckwheat often, usually without the baking powder and vanilla, and make them thin/flat galettes.

So excited to make these! I find it so hard to get almond flour in the UK but it’s easy to get ground almonds, would these be a possible substitute?

Absolutely - fine ground is the same thing as almond flour in my books.

These unfortunately did not work out as hoped in our house. The almond wanted to burn before gaining enough structure to flip. The texture of the salvageable cakes was too crumbly for my preference. I’ll have to try again

Sorry to hear it! They take a little longer to set than a regular pancake, try lowering the heat or mixing 50/50 regular flour if you don’t like crumbly.

Wonder If substitute baking powder with a half a spoon of soda foamed by equal parts of lemon juice/apple vinegar would work? I always add it to crepes, pancakes and cakes for fluffiness and rise.

You can, just pay more attention to how much you use, because it can taste bitter if in excess.

I made these! So lovely - it does take a little more patience and lower heat than a pancake with flour but I was also full for much longer

I bought a bunch of coconut flour, and use it less often than I imagined. Would it be ridiculous of me to try subbing it in for almond flour?

I think the coconut flour absorbs more liquid than other flours, so you may have to take that into consideration.
